I love all things pumpkin, especially when it comes to baking. During my baking mood last week, I made a big batch of pumpkin chocolate chips muffins. We ate some right out of the oven and took some on our trip to Disney. The rest we froze.
Muffins are one of my favorite things to make ahead. They are easy to make in big batches. And they freeze really well. Simply make your batch, place whatever you want to freeze into a freezer bag and the bag into the freezer. When you want one, pop it in the microwave for 20 seconds. Or if you’d like the whole bag, place in the fridge overnight and those yummy muffins will be good to go in the morning!
